Yet like tea, herbs are affected by terroir, climate, production, and brewing techniques that provide a myriad of unique profiles. In this session, Elizabeth highlights the beauty of herbs and infusions and why they should be elevated to their own fine beverage category. This class explores a modern sensory approach that invites you to engage all of your senses to select, taste, present, and experience these botanicals. By tapping into the senses rather than memorizing facts, you will understand their complexity, energetics (warming or cooling), and flavor interactions. Using examples from wine tasting, Elizabeth also introduces innovative terminology that can be applied to describe aroma and flavor profiles. Herbal blends have always been steeped in a one-size-fits-all manner, but we will explore different brewing methods and techniques to extract maximum flavor and fragrance.
